Achaari Masala (Pickle Spice)

So many different types of spices are used in Indian cooking.  We Indians love the flavor of pickles.  This spice blend is a mixture which is what we use when we make pickles.  Pickled flavor dishes are full of flavor and beautiful aroma.

Ingredients:

  • 2 tbsp Mustard Seeds
  • 2 tbsp Cumin Seeds
  • 2 tbsp Fennel Seeds
  • 2 tbsp Nigella Seeds (Kalonji)
  • 2 tsp Fenugreek Seeds
  • 1 tsp Carom Seeds (Ajwain)
  • 2 tsp Amchoor (Dry Mango Powder)
  • 1/4 cup Whole Dried Red Chillies (approximately 75 grams)

Directions:

Roast all the ingredients except red chillies and amchoor in a pan stirring continuously so that it doesn’t burn.  Now put the mixture in a bowl to cool down.  In a meanwhile, roast the chillies also to have that smokey flavor.

Using a coffee grinder, grind all the ingredients and store it in an air tight container.   This masala can be used in so many things such achaari chicken, gobhi, paneer etc.
