Avocado & Grilled Corn Salsa

Corn, one of mine and my father’s favorite thing to eat specially when they are grilled with the chaat masala.  Reminds me of the days in India, when we used go to those street vendors and get grilled corn.  Here it is hard to make corn if we have the electric stove.  Yes we can grill it on the BBQ grill but it usually dries up, so I prefer to grill it on the gas stove.   Trying to eat healthy these days, as I have to shed a few pounds. Without any further delay, let me share this delicious recipe which is full of flavor and can be eaten as a Salsa or Salad.

Ingredients:

  • 3-4 corn (grilled)
  • 3/4 jalapeño chopped
  • 1/2 cup scallion(s) (white & green part)
  •  1 avocado peeled, pitted & cubed
  • 1/4 tsp roasted cumin powder
  • salt to taste
  • 1/4 tsp crushed red peppers (optional)
  • 1-2 cloves of garlic chopped finely
  • chopped cilantro
  • 1/4 black pepper
  • 2 tbsp fresh lime juice

Directions:

First of all, remove all the husk and silks from the corn and grill it by placing it on the gas stove or grill if you don’t have a gas stove. Do not over do them so they taste burnt.

After the corn cools down, place them on the cutting board or a bowl upright and cut the kernels using the paring knife or any other kind of a sharp knife.

Add the rest of the ingredients which is scallions, garlic, jalapeño, cilantro, lime juice, salt, red crushed peppers, black pepper, cumin powder, avocado and mix it well using a spatula or your hands.

If you are not serving right away then leave the avocado and lime juice for later, meaning add them right before serving.  This salsa is full of flavors of garlic, smoky flavor from the grilled corn.

Serve chilled with tortilla chips or eat it just like that as a salad.
