Baked Rosemary & Garlic Potato Wedges

I don’t think there is anyone I know who doesn’t like potatoes.  My husband and my daughter just love potatoes.  They want potatoes in anything and everything.  Sometimes I tell my daughter, if you eat too many potatoes, you will start looking like a potato and she goes, “Mama, you know potato is my favorite vegetable.”

I made her these wedges and she was like in heaven.. “Mama these potatoes are so good & flavorful,  I love it.  Make these kind of potatoes all the time please.”

Ingredients:

  • 2 potatoes, peeled & cut into wedges
  • 1 tsp dry rosemary, ( you can use fresh too)
  • 3 cloves of garlic, grated
  • 1 tbsp olive oil
  • sea salt to taste
  • 1/4 tsp paprika

Directions:

Peel and wash the potato.  Cut it into wedges and soak it in the water for a few minutes.  In the meantime, in a mixing bowl, add all the ingredients and mix it.  Drain the wedges and put in the bowl and mix it so the potatoes are coated in the marinade.DSC_2817-1

Pre heat the oven at 400F and prepare the cookie sheet with a parchment paper.  Spread the potatoes on the sheet without overlapping.

Bake the wedges for 30-35 minutes in the convection oven, make sure to turn them a couple of times in between. I changed the setting to broil for 3-4 minutes to get the nice crisp color.
