Eggless Tutti Frutti Cookies

Happy Holidays everyone!!!!!  First of all I would like to thank my readers once again.   Without your support I couldn’t have gotten this far.  What did you bake this holiday season?  I have baked Almond Cookies which I made for my first order.   I thought what will be better than colorful Eggless Tutti Frutti Cookies.  These cookies are so festive and full of colors.

These cookies are from a famous bakery in Hyderabad, India and are called Karachi Biscuits.  I have never been to Hyderabad myself but have heard about these cookies.  Then my mom told me that we get these here in the Indian stores in US.

Eggless Tutti Frutti Cookies are very easy to make and taste divine.   When I baked these the whole house was smelling amazing with the aroma of baking.   You can make the dough ahead of time and bake them the next day too.

What is Tutti Frutti?

Tutti Frutti is referred to as candied raw papaya in India and can be used in baking such as cookies, bread, or used as ice-cream toppings.  It is also used in Italy and different fruits are used.

Ingredients:

  • 1.5 cups all purpose flour
  • 3/4 cup powdered sugar ( i put slightly less than 3/4 cup)
  • 1/2 cup custard powder
  • 1/2 cup tutti frutti
  • 1/4 cup chopped cashews (didn’t use it, as I didn’t have it)
  • 1 tsp baking powder
  • 1 tbsp rose or pineapple essence
  • 1/2 cup butter
  • 3 tbsp vegetable oil
  • 4 tbsp milk

Directions:

Cream butter and sugar together using the paddle attachment of an electric mixer.  Then add oil and rose essence to it.  In a separate mixing bowl, mix in all purpose purpose flour, custard powder, tutti frutti, baking powder, cashews if using.

Mix the powder mixture to the butter n sugar and mix it.  Don’t over mix in the mixer. If need be mix it again with hands.  If the dough doesn’t come together to make a log add a couple of tablespoons of milk and it should work.

Make the log and wrap it in the plastic serene wrap and put in the fridge for couple of hours.   Once the dough is ready, you can cut them into quarter inch of slices and place them on the baking sheet and bake the cookies at 350 degrees for 12 mins or more depending on your oven.

Once the cookies are baked, pull it out of oven and let them cool down before placing them on the cooling rack.  Let them cool down completely before putting them in the air tight container.

Enjoy them with a cup of tea or coffee.
