Fusion Chicken

Everyone wants a change from their normal daily type of food so that there is a variety.  We had so many different types of food that my mom use to make for all us. She is such a versatile cook. So, this dish is actually my mom’s creation and she gave me the idea to make this chicken which goes great with rice or naan.  Then I couldn’t decide on a name for this dish, but after thinking for a good few minutes I decided to name it Fusion Chicken. Hope you all enjoy it.

Ingredients:

  • 2 lbs mix chicken thighs n drumsticks ( cleaned)
  • 3-4 tbsps yogurt
  • 3 tbsps Masaman Yellow Curry Paste (Thai Curry Paste)
  • 1 whole garlic pod chopped
  • Puree of 1 tomato
  • Salt to taste
  • Red chilli powder
  • Paprika Powder
  • Cilantro for garnish

Directions:

Clean the chicken and cut into medium size pieces.  Wash the chicken in a strainer with hot water. Now its time to make the marinade.  In a mixing bowl, add yogurt, salt and Thai curry paste.  Mix well.  Then add 2-3 crushed garlic cloves and the chicken and give it a good mix.  Now take that marinated chicken and put in a zip lock bag and let it sit for at least a couple of hours in the fridge.   If you don’t have time then you can do a quick 15 minute marinade too.

In a kadhai, add about 2 tablespoons of olive oil.  Crush the remaining garlic cloves and put it in the oil and let it stir for a few mins.

Add the marinated chicken and let it cook stirring occasionally.  The chicken needs to be roasted until you see the oil is separated.

Add the tomato puree, additional salt if needed, red chilli powder, paprika powder and let it roast so that the tomato is blended well and the raw taste is gone.   If you want a lot of gravy, add water, cover and simmer for a few minutes.  Now add the chopped cilantro and mix it. Serve hot with naan or rice along with onion salad.
