Naan Khataai (Indian Eggless Cookies)

Naan Khataai or eggless cookies are one of the most delicious, melt in mouth delicacy.  These are very easy to make and can be enjoyed with tea or coffee by adults and kids.  Khataai’s can be made with different flavor by adding crushed almonds instead of besan. There is one of the recipe out which adds semolina for a grainy texture and crispiness, but I myself love the one without semolina.

Ingredients:

  • 1.5 cup all purpose flour
  • 1/2 cup besan (gram flour)
  • 1 cup powdered sugar
  • 1 cup ghee (clarified butter)
  • 1/2 tsp baking soda
  • Green cardamom (crushed seeds)

Directions:

Sift the flour, besan and baking soda and keep aside. Using the electric mixer, whip the sugar and ghee on a low speed for a few mins. Add the dry ingredients and mix well. Then refrigerate for 10-15 mins. Pre-heat the oven 300F. Make small balls (Pedas) and place it on a cookie sheet leaving space in between.  Add the crushed elaichi and press it lightly.

Bake it for 10-15 mins until golden. After taking it out of oven, give a minute or two then place on a cooling rack.  Put them in an air tight container and enjoy with your tea or coffee.

They came out delicious and the kitchen smelled heavenly.

      I have never made it in the microwave. I baked it in my convection oven? What kind of microwave do you have?
