Quinoa Potato Cutlets

Schools are going to open soon here in the US.  Once again we mothers have to think of what can we give our kids for lunch which is healthy and tasty. Its a task to think of new ideas as these kids get bored so quickly too.  Quinoa Potato Cutlets is what I came up with for Sonal’s kids lunch menu collective post.

Mornings are usually hectic when we have to go to work and get these kids ready.  These cutlets are easy and you can partly prepare the ingredients a night before to make your life easier.  And to get these kids to eat everything is another big deal.  The combination of quinoa and potatoes covers two aspects protein and carbs.

My daughter did the taste test for me and was approved so these cutlets got definitely a thumbs up. It just makes your day when you hear from your little one, “Mama the Quinoa Potato Cutlets are good.”  She is a sweetheart anyways, she always appreciates what I make and motivates me to try new things.

Without any further delay, let me tell you how did I make these.

Ingredients:

  • 1/2 cup quinoa (cooked)
  • 2 potatoes, boiled or baked
  • 1-2 small green chilies, chopped
  • 1 small onion, finely chopped
  • 1 inch ginger, finely chopped
  • cilantro, finely chopped
  • 2 tbsp kasoori methi
  • Salt to taste
  • 1/2 tsp amchoor
  • 1/2 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/4 tsp chaat masala
  • olive oil

Directions:

Cook the quinoa according to the instruction on the packet.  Set aside to cool down.  While the quinoa is cooking, boil or bake the potatoes.  I baked them in the microwave and let them cool down.

In a mixing bowl, add onions, ginger, green chili, cilantro.  Mash the potatoes and add quinoa to it.  Also add the all the spices at this time.  Mix everything together using your hands.  Make sure to test the spices and salt at this time.  Add if you need anything.

Heat the olive oil in a shallow frying pan.  Take a little bit mixture at a time and make the balls out of it and press it down in between the palms.  Shallow fry them on the hot frying pan and cook it turning in between.

Serve hot with mint chutney or ketchup.
