Sooji ka Chilaa (Savoury Semolina Pancake)

Thinking what to cook is the hardest thing.  Once you know what to cook, it is a piece of cake.  Today I was thinking what to cook for lunch, didn’t want anything heavy as that will put me to sleep.  So, wanted to keep it light.  Sooji (Semolina) is very light and ended up making easy sooji ka chilaa.  This can be eaten as a snack or if you want to eat it for breakfast.DSC_0491-1

Check the batter and adjust the consistency by adding a little water. Add salt and red chilli powder into the batter and mix.

In a frying pan, add a tbsp of olive oil, then pour the batter enough to spread it in a circular motion like a dosa. Sprinkle the chopped onion, cilantro, tomato, green chilli and paprika to it.

I did not add tomatoes as we don’t like chunky tomatoes, instead I added orange colored bell pepper for color. After a 2-3 minutes turn the pancake over and cook for another few mins.

Make sure it is cooked evenly and serve hot with mint chutney.
