Spinach & Tomato Soup

I love soups, but it has to be made the way I like it which is flavorful for sure.   I grew up drinking this tomato based spinach soup.  This Spinach & Tomato Soup is my Mom’s recipe and has been liked by everyone.

DSC_3485It is such an easy and quick recipe when you are not in a mood to do elaborate cooking.  Love soups specially in the winters and also for Navratri when we are fasting as it doesn’t have any onion and garlic.


This Spinach & Tomato Soup is not very thick in consistency so it is not heavy on the stomach.  It is very nutritious with all sorts of vitamins as we all know spinach is a good source of iron.  Lovely flavors of ginger and cumin.   Do give it a try if you like spinach and tomatoes.  You won’t be disappointed..And don’t forget to give your feedback..

Ingredients:

  • 2 cups roughly chopped fresh spinach ( can use frozen too)
  • 1 cup tomato puree
  • ginger chopped
  • 2-3 red dried chillies
  • 1 tsp cumin seeds
  • 1/2 tsp roasted cumin powder
  • 1/4-1/2 tsp red chili powder or per the taste
  • salt to taste
  • 2-3 tsp olive oil
  • 2 cups of water

Directions:

Roughly chop the spinach, if using fresh and wash it; set aside.  In a pot heat the oil.  Add cumin seeds and red chillies.  Let it splatter.

DSC_3479Add chopped ginger to it. If you don’t like chopped ginger, you can always grate the ginger or use ginger paste.  Now add washed spinach and sauté for a good few minutes, which is until the green color starts to change slightly.

DSC_3480Then add the tomato puree to the spinach and saute for another few minutes until tomato puree doesn’t smell raw.  Also add salt, red chili powder to it.

DSC_3481Now add water and cover it to boil for a few minutes.  You will start noticing the spinach cool has changed more.  Uncover for a couple of minutes.

DSC_3482Add cumin powder, also taste to see if you need additional salt and red chili powder. Simmer for a few minutes and your Spinach & Tomato Soup is ready.

Serve hot with a breadstick, or crackers of your choice.
