Vanilla Cupcakes

The only recipe you will need for making  your first perfect  Vanilla Cupcakes.  This is my first time making the cupcakes from scratch and first recipe of cupcakes on my blog.

DSC_4399 copySo, April 5th was my son’s 5th birthday and he wanted me to make cupcakes for his classmates.  I am thinking I have never made cupcakes before and how in the world am I going to pull this off without messing it up.


Searched through the net to see if I can find the full proof recipe, which was not guaranteed.  So I called my mom up and asked her to give me her recipe.  Did a trial before I  made the actual batch.  They came out super moist and lovely.  My kids loved it, that’s all it matters.

Ingredients:

  • 1.5 cup all purpose flour
  • 1/2 cup + 1 tbsp soft butter
  • 1.25 cup castor sugar
  • 3 eggs
  • 150 ml milk
  • 1 tbsp vanilla extract
  • 3 tsp baking powder
  • 1/2 tsp salt

Directions:

Cream butter and sugar until fluffy.  Add eggs one by one and mix well.  You can use a hand whip, I used electric mixer.  Also make sure your butter eggs are at room temperature.

In a mixing bowl, mix the all purpose flour, baking powder and salt and sift or mix well .  Add milk, vanilla extract to the mixture and whip for another couple of minutes.

Now add the dry ingredients slowly to the wet ones while the whipper is still going on.  Whip the batter until everything is completely mixed.

Line the cupcake pan with the liners.  Pour the batter using the ice cream scoop so that they all look the same.  One scoop each should be good.  Bake it at 315F for 10-15 mins.  Make sure you keep an eye on them.  Do the tooth pick test to see if they are done by poking the tooth pick into the cupcake and if it comes out clean they are done.

For the icing, I used the cool whip and added a couple of colors and piped using the 2M tip.  Tadaaa..the cupcakes are ready!!!!!
