Aam ki Launji (Chutney)

Are there any chutney lovers here?  I am a big chutney lover myself who loves anything chatpata (Tangy), khattaa meetha..(sweet & sour).  So, how did I end up making Aam ki Launji one evening.

Aam ki LaunjiI was at my sister in law’s house and she goes Bhabhi (sis in law), I have these cut mangoes that I bought from Costco and they are a little sour.  She goes can you please see if you can do something with it.  I was like you can make mango chutney, so she is like I don’t know you can make it and give it to me.


I remembered that my Mom used to make this Aam ki Launji when I was little back in India.  I had a little idea on what to do.  After a couple of days I made the chutney and it came out super yummy.  My sis in law enjoyed it to the core.  As a matter of fact, I was told that she is done with the chutney and want more.

 

Ingredients:

  • 3 mangoes, half kacha pakka, cubed ( you can use kachhe too)
  • salt to taste
  • 1/2 tsp kalonji (onion seeds)
  • 1/2 tsp saunf (fennel seeds)
  • 3/4 tsp roasted cumin powder
  • 1/2 tsp red chili powder
  • 2 tsp vinegar
  • 1/4 tsp turmeric powder
  • 1 tbsp oil
  • 3-4 tbsp sugar or as per taste
  • pinch of asafetida powder (hing)

Directions:

Heat the oil in a pan, and add hing powder, kalonji, saunf.  Saute for a minute or so until slightly done.  Then add the cubed mango pieces along with red chili powder, salt, cumin powder, and  turmeric.  Cover it and saute for 7-8 minutes.  Do not over cook it.

Add sugar and vinegar to the mixture.  Now simmer for a few minutes uncovered.   The mixture should be mushy and a little bit gravy. It is not necessary that there will be gravy.

Aam ki LaunjiYour Aam ki Kaunji is ready.  Store in the air tight container and keep refrigerated.  Enjoy this sweet and sour chutney with your meal.
