Cajun Cauliflower Bites

DSC_4309 copyI am sure you know what is our theme this month…  What does Valentine Day means to  you all?   For me it is a day that I like to spend with my loved ones.  It is not all about eating sweets, and chocolates either.   We tried to be a little different by making savory dishes instead of sweets and heart shaped so we can all enjoy without worrying about our sugar levels going up.

So Cajun Cauliflower Bites is what I am bringing, which are healthy, yummy, quick and easy to prepare.  We love cauliflower as a main dish, and I wanted to try and see if we can make a quick appetizer which is simple and not time consuming.  I searched the net and saw a few recipes and used what I had in the kitchen.  So here I am with my quick and easy dish.

Ingredients:

  • 1 whole cauliflower (bite size florets)
  • 1 tsp oregano
  • 1/8 tsp or slightly more cayenne pepper, or to taste (otherwise red chili powder)
  • 2 tsp paprika (chili powder without the heat, only color)
  • 1 tsp dried basil leaves ( omit this if you have parsley n thyme)
  • 1 tsp dried parsley (didn’t use it)
  • 1 tsp thyme (didn’t use it)
  • 3/4 tbsp olive oil
  • 3/4 tsp garlic powder
  • 1/2 tsp sea salt (otherwise regular salt)

Directions:

Cut the cauliflower florets into bite size.  Wash them thoroughly and set aside to drain the excess water.

DSC_4286In the mean while, mixed all the spice rub ingredients except the oil in a small bowl.

DSC_4285In a mixing bowl, put the olive oil and toss the cauliflower in it.  Now sprinkle the spice rub all over the florets and mix using your hands and make sure they are coated well.

Heat the oven at 425F.  Cover the baking tray with parchment paper.  Place the florets on the tray and bake it for 15 minutes. Turn once and bake for another 5-7 minutes.

Serve hot as an appetizer with your choice of dipping sauce, I served it with ranch or as a side dish.  This dish will serve 3.  Also, don’t forget “Portion Control is the key”

Lets look at the ingredients used:

Cauliflower:  American Diabetes Association classifies cauliflower as a non starchy vegetable which is an excellent addition to your diabetic diet.  It is low in carbs compared to other starchy vegetables.  1 cup of cauliflower has 5 grams of carbs, out of which 2 grams is from the fiber.

Cayenne Pepper: is an herb made of dried pods of chili peppers.  According to World Health Foods, cayenne pepper curbs the insulin.  Capsaicin, an active ingredient in peppers helps stabilizing the blood sugar.

Basil:  There are so many different basil leaves out there such as sweet, lemon, thai, etc.  Basil has antimicrobial properties, helps in diabetes, cardiovascular, inflammation and cancer.

Cajun Cauliflower Bites, an quick and easy appetizer as well as a side dish without the extra calories, which makes it an awesome choice for Diabetics.

Ingredients
  

  • 1 whole cauliflower bite size florets
