Coconut Macaroons

Its that time of the year when every household gets into the baking mode..Yes!!!! It is the holiday time…I was thinking of baking a few things this year for the holidays, when Sonal, my blogger friend was putting together holiday festive collection of cookies.   I had a few in mind and Coconut Macaroons is what I decided to bake for her collection.

All of sudden I planned a trip to Florida to see my mom and I was worried, will I be able to make it on time but was kind of a perfect timing and worked out well. Love my mom’s macaroons so decided to use her recipe and made it under her supervision.

Ingredients:

  • 1.5 lbs desiccated coconut
  • 10 oz egg whites
  • 10 oz sugar
  • 8 oz corn syrup
  • 3 oz butter, melted ( not hot)
  • maraschino cherries (optional)

Directions:

In a pot put some water on a low-medium heat.  On that pot put a mixing bowl.  Add the egg whites along with the sugar.  Stir continuously for a couple of minutes to dissolve the sugar but make sure the egg does start cooking.

IMG_3309Now add butter and mix well.   In that mixture add coconut and mix it altogether using your hand.

IMG_3340Once the mixture is all done, using a medium sized scoop, scoop out the mixture and make balls.  Cover the baking tray with parchment paper and place the coconut balls on the tray spaced about an inch apart. Cut the maraschino cherries in half and put it on the coconut balls.

IMG_3341Heat the convectional oven at 300F and place the tray in the oven and bake it for 10-15 mins or until the coconut has a color.  Baking time varies depending on the oven.
