Daal Macaroni-Diabetes Friendly Thursday

This week’s theme is Rakshabandhan Special, where we have created our brother’s favorite dish keeping in mind diabetic choices.  Raksha bandhan in Sanskrit means, “knot of protection”.  It is a festival which is celebrated by brothers and sisters.  Sister’s tie a sacred thread on his brother’s wrist and pray for their brother’s long life and brother’s take a vow to protect their sister and gives a gift to his sister.

IMG_2520-1This dish is not very common, but we have eaten it from childhood as this was created by my mom’s family since their childhood in Burma.   It is simple but flavorful dish which is made with a combination of lentils and macaroni, Daal Macaroni.  I have used multigrain macaroni instead of regular.

11940539_756510484459335_773299704_oMy husband and daughter tried it for the first time as they have said no in the past.  they loved it and have gone for seconds.  Daal Macaroni is one of my brother’s favorite dish and can be done in no time.  Lets look at the benefits of toor (Arhar Daal).

Arhar (Toor Daal)– Toor Daal also also known as legume and split pigeon peas has number of health benefits such as folic acid, complex carbohydrates over simple carbs, fiber and protein.  Consumption of legumes regularly as part of a healthy diet lowers risk of heart disease, stroke, certain cancers, type 2 diabetes and cardiovascular disease.

Multigrain Macaroni– The whole grains and dietary fiber contributes to heart health and reduces your cholesterol. By using multigrain macaroni the carbohydrates will absorb slowly, and will have a gradual affect on blood sugar levels.

Without any further delay, lets get on to the recipe and see what is this Daal Macaroni all about…We have always enjoyed, hope you all like it as much as we do.

Ingredients:

  • 1 cup toor daal, washed and boiled (Arhar Daal)
  • 1.5 cup macaroni boiled (used multigrain)
  • 7-8 cloves of garlic
  • 1/2 cup of tomato puree
  • 1 tsp mustard seeds
  • salt to taste
  • 2 tsp olive oil

For garnishing:

  • Chopped cilantro
  • fried/dry roast onions
  • fried garlic in a tsp olive oil with red chili powder & Paprika
  • chopped green chilies in vinegar
  • soy sauce
  • lemon/lime juice

Boil the macaroni as per the directions on the box and set aside.

DSC_3877While boiling the macaroni, you want to pressure cooker the daal (lentils) with salt and turmeric.  Once the daal is boiled, you want make the tempering, by putting 1 tsp of oil in a pan.  After it gets hot, add mustard seeds and let them crackle.  Now add chopped garlic and saute till light brown.  Add tomato puree and cook for few minutes until the raw smell and flavor goes away.

In a frying pan, add about a teaspoon of olive oil and fry the onion slices until dark brown and set aside.  In the same oil, add coarsely chopped garlic and let it saute till its brown.  Turn the gas off and add red chili powder along with paprika.  Mix well.

Wash and chop the cilantro.  Put everything in small little bowls, which is soy sauce, cilantro, fried onions, garlic with red chili powder, vinegar & green chili and lemon/lime quarters.

After the all the garnishing is ready, add boil macaroni to the lentils (daal) and simmer for a few minutes.

DSC_3878Now pour the Daal Macaroni in a pasta bowl or soup bowl.  Garnish with all the things mentioned above for garnish.  You can use the garlic chili oil, vinegar and soy sauce as per your taste.  Mix it well.

Daal Macaroni-Diabetes Friendly Thursday

Try this Daal Macaroni which is a unique dish creation by my family.

Ingredients

    Sounds like know suey to me! A very interesting recipe. Please mention the quantity of oil in your recipe since it is very important. Can we add any vegetables to it, to make it more wholesome?
