Moong Dal Kebab Wrap-DFT

Celebrate the month of May with team DFT, indulging on some delicious and hearty  wraps that are diabetic friendly and weight watchers friendly.  For this month’s theme, I am bringing Moong Dal Kebab Wrap which is not just healthy but came out super delicious, specially when you want your kids to eat lentils.

My daughter loved it and so did my husband.  This was a perfect dinner for my husband who is diabetic and is trying to shed a few pounds.  Such a simple recipe without sacrificing the taste.

 

Moong Dal Kebab Wrap

Ingredients:

  • 1 cup green moong dal
  • 1.5 cup water
  • 1/2 red onion, chopped
  • salt to taste
  • 1/4 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/4 tsp amchoor
  • 1/2 tsp Shaan Lahori Fish Masala
  • 1/4 cucumber, cut into match sticks (optional)
  • 1/2 red onion, thinly sliced
  • 2 tbsp yogurt
  • 1 tsp mint chutney
  • whole wheat  tortilla (low carb)
  • 1.5 tsp olive oil
  • 1/2 lemon

Directions:

Boil the dal with minimum water.  Once its boiled, set aside to cool down.  In the dal, add chopped onion, salt, red chilli powder, garam masala, amchoor, and lahori fish masala.

Mix everything well.  The mixture should be moist and gooey.  Take a little mixture and shape them oval or round.  Heat the pan with olive oil and cook it until the outside is brown.

Mix yogurt and mint chutney to make the sauce.  To assemble, warm the tortilla on a tawa or flat pan.  Add 3-4 lentil kebabs along with sliced onions and cucumbers.  Drizzle the lemon juice,  yogurt sauce and wrap it.

Suggested serving is one wrap.  Don’t forget “Portion Control is the Key.”

Green Moong Dal-  Green moong is a nutritional powerhouse which is a good source of protein, dietary fiber, vitamins, minerals.  With a low  glycemic index of 25, this lentil is a smart choice for the diabetics as it helps regulate the blood sugar.  It also has anti aging properties, helps people who have digestive issues.

Red Onion– Red onion has a low glycemic index of 10 and is good for diabetics.  You can regulate blood sugar and insulin levels, which in turn causes the body to store less fat.

Cucumber-  Cucumbers are low carb option for diabetics.  One cup of cucumber has 5g of carbs and excellent source of Vitamin K.

Whole Wheat Tortilla– When buying the stuff from the market, you will have to keep a few things in mind to make the right choice.   Here is the link for the bread guideline :
