Tutti Frutti Cake | Tea time cake

Tutti Frutti cake is a perfect tea time cake along with a cup of tea or as a dessert which is enjoyed by both kids and adults.

Ingredients
  

  • 1.5 all-purpose flour
  • ½ cup butter
  • 2 eggs
  • ¼ tsp baking soda
  • 1.5 tsp baking powder
  • 1 cup of sugar
  • 1 tsp pineapple essence
  • ¼ tsp salt
  • ½ cup milk
  • ½ cup plus additional to top it off
  • 1 tbsp all-purpose for coating Tutti Frutti

Instructions
 

  • Preheat the oven at 335 F. Also grease a loaf pan or a bundt pan whatever you are using. Once greased generously, sprinkle a little flour and turn the pan upside down to take the access out.
  • In an electric mixing bowl, cream butter and sugar well, it will take about 5-6 mins. Make sure butter and eggs are at room temperature. Once it is light n fluffy, add 1 egg at a time and keep the mixer going.
  • Now add whatever essence you are using, I used pineapple if you don't have pineapple you can also use vanilla too.
  • In a mixing bowl, sift all the dry ingredients. And in another small bowl, add your half cup of tutti frutti along with the tablespoon of flour. Mix it together to coat the fruit.
  • Add room temperature milk to the wet ingredients and mix together. Now add the flour slowly while the mixer is running at a slow speed.
  • Mix until everything is mixed well. Do not overmix the batter.
  • Fold the tutti frutti that you put aside. Pour the batter into the baking pan.
  • Tap it to level the batter and sprinkle about a tablespoon of tutti fruitti on top.
  • Bake it for an hour at 335F or until the toothpick is clean.
  • Once you take it out of the oven, let it sit in the pan itself for 10 mins.
  • Take the cake out of the pan and let it cool completely on the cooling rack.
  • Cut into slices and serve it with hot tea.
