One Pot Spicy Noodles

One Pot Spicy Noodles,an all star recipe for your weeknight dinner which can put together in less than 30 minutes and full of bursting flavors.

Ingredients
  

  • 1 pack flat noodles used one from Asian store
  • choice of veggies used frozen stir fry blend
  • 3-4 garlic cloves minced
  • 1 inch of ginger grated
  • soy sauce per taste
  • 1-2 tsp fish sauce or per taste
  • 3 tbsp peanut butter
  • 2 tbsp siracha sauce
  • 1.5 tsp brown sugar
  • 2 scallions chopped
  • 1 tbsp sesame oil
  • 2-3 tbsp roasted peanuts
  • 2 tbsp olive oil

Instructions
 

  • Boil the noodles according to the directions on the packet. Drain and rinse it in the cold water and set aside. In a small mixing ball, make the sauce by adding ginger, peanut butter, siracha sauce, sesame oil, brown sugar, soy sauce. Whisk it all well to make the sauce.
  • In a wok or a pan, heat the olive oil. Add minced garlic and let it saute till slightly brown. Add the veggies to the pan and let it saute for additional few minutes. I used frozen veggies, but if you are using fresh ones, make sure you cut, wash and drain them before hand. Do not over cook the veggies, you want that half cooked and half raw look.
  • Add the boiled noodles and pour the sauce over and mix well. Also add fish sauce to the noodles and stir it. Let it cook for a few minutes.
  • Once the noodles are done, garnish it with chopped scallions and peanuts. Serve hot.
