- 3 mangoes half kacha pakka, cubed ( you can use kachhe too)
- salt to taste
- ½ tsp kalonji onion seeds
- ½ tsp saunf fennel seeds
- ¾ tsp roasted cumin powder
- ½ tsp red chili powder
- 2 tsp vinegar
- ¼ tsp turmeric powder
- 1 tbsp oil
- 3-4 tbsp sugar or as per taste
- pinch of asafetida powder hing
Heat the oil in a pan, and add hing powder, kalonji, saunf. Saute for a minute or so until slightly done. Then add the cubed mango pieces along with red chili powder, salt, cumin powder, and turmeric. Cover it and saute for 7-8 minutes. Do not over cook it.
Add sugar and vinegar to the mixture. Now simmer for a few minutes uncovered. The mixture should be mushy and a little bit gravy. It is not necessary that there will be gravy.
Your Aam ki Kaunji is ready. Store in the air tight container and keep refrigerated. Enjoy this sweet and sour chutney with your meal.
