In a skillet, heat the olive oil. Add onion and mix bell peppers and saute it for a few minutes. If using frozen bell peppers, there will be a little water content. Let that evaporate and stir every couple of minutes. Once the water has been evaporated, add garlic. Stir it for a minute and then add the cut chicken, paprika, cumin, salt, and mrs dash mix.
Mix it well and then add the black beans, jalepenos, crushed red peppers and corn to it. After mixing everything together, do a taste test and adjust the spices if needed. Saute for an additional two minutes. Sprinkle cilantro which will add more refreshing flavor.
Once the mixture cools down, you can assemble the cups. To assemble, in a muffin pan, spray generously. Line the wonton wrappers. Then add 1 table spoon of mixture and a little bit of mexican cheese. Then repeat the process one more time.
Pre heat the oven at 375 F. Once it is preheated, bake it for 10-12 minutes until the edges are brown and cheese has melted.
Serve hot straight out of the oven with your favorite salsa or chipotle sauce, or just like that.
