Southwestern Chicken Cups

Need an appetizer for a Mexican theme, try these Southwestern Chicken Cups which are semi home made and are quick n easy to put together.

Ingredients
  

  • 24-36 wonton wrappers
  • 2-3 cups cooked chicken (used fajita style frozen chicken strips)
  • 1 can sweet kernel corn drained (can use frozen)
  • mix bell peppers used frozen ones, you can use fresh
  • 1 can black beans drained
  • 1 red onion chopped
  • 1 jalapeno chopped
  • cilantro chopped
  • 2-3 garlic cloves
  • ¾ tsp paprika
  • 1 tsp roasted cumin powder
  • ½ tsp garlic & herb dash mix optional
  • ¼ tsp red crushed pepper
  • 1 tbsp olive oil
  • salt to taste
  • Cooking spray

Instructions
 

  • In a skillet, heat the olive oil. Add onion and mix bell peppers and saute it for a few minutes. If using frozen bell peppers, there will be a little water content. Let that evaporate and stir every couple of minutes. Once the water has been evaporated, add garlic. Stir it for a minute and then add the cut chicken, paprika, cumin, salt, and mrs dash mix.
  • Mix it well and then add the black beans, jalepenos, crushed red peppers and corn to it. After mixing everything together, do a taste test and adjust the spices if needed. Saute for an additional two minutes. Sprinkle cilantro which will add more refreshing flavor.
  • Once the mixture cools down, you can assemble the cups. To assemble, in a muffin pan, spray generously. Line the wonton wrappers. Then add 1 table spoon of mixture and a little bit of mexican cheese. Then repeat the process one more time.
  • Pre heat the oven at 375 F. Once it is preheated, bake it for 10-12 minutes until the edges are brown and cheese has melted.
  • Serve hot straight out of the oven with your favorite salsa or chipotle sauce, or just like that.
