Spiced Bhein (Lotus Root)

Ingredients
  

  • Fresh lotus root sliced
  • ¾ tsp roasted cumin powder
  • salt to taste
  • ½ tsp red chilli powder
  • ¼ tsp turmeric powder
  • ¾ tsp amchoor
  • ¾ tsp homemade garam masala
  • 2 tbsp olive oil
  • 2 tsp roasted besan
  • 1 cup water
  • juice of half lemon
  • cilantro to garnish

Instructions
 

  • Peel and slice the lotus root, not too thin or thick. In a pressure cooker, add the water and lotus root. Cook it until two whistles. Let it sit in the steam. Drain it and set aside.
  • In a frying pan, add the oil and let it heat up. Put the boiled roots in the pan along with all the spiced except besan. Mix it well. Let it roast for a few mins. Adjust the spice one they are roasted as per your taste.
  • Now add the besan which will give it a little crispiness. Roast for additional few minutes. Drizzle lemon juice and garnish with cilantro before serving.
