2cupsroughly chopped fresh spinachcan use frozen too
1cuptomato puree
ginger chopped
2-3red dried chillies
1tspcumin seeds
½tsproasted cumin powder
1/4-1/2tspred chili powder or per the taste
salt to taste
2-3tspolive oil
2cupsof water
Instructions
Roughly chop the spinach, if using fresh and wash it; set aside. In a pot heat the oil. Add cumin seeds and red chillies. Let it splatter.
Add chopped ginger to it. If you don't like chopped ginger, you can always grate the ginger or use ginger paste. Now add washed spinach and sauté for a good few minutes, which is until the green color starts to change slightly.
Then add the tomato puree to the spinach and saute for another few minutes until tomato puree doesn't smell raw. Also add salt, red chili powder to it.
Now add water and cover it to boil for a few minutes. You will start noticing the spinach cool has changed more. Uncover for a couple of minutes.
Add cumin powder, also taste to see if you need additional salt and red chili powder. Simmer for a few minutes and your Spinach & Tomato Soup is ready.
