Spinach & Tomato Soup

Ingredients
  

  • 2 cups roughly chopped fresh spinach can use frozen too
  • 1 cup tomato puree
  • ginger chopped
  • 2-3 red dried chillies
  • 1 tsp cumin seeds
  • ½ tsp roasted cumin powder
  • 1/4-1/2 tsp red chili powder or per the taste
  • salt to taste
  • 2-3 tsp olive oil
  • 2 cups of water

Instructions
 

  • Roughly chop the spinach, if using fresh and wash it; set aside. In a pot heat the oil. Add cumin seeds and red chillies. Let it splatter.
  • Add chopped ginger to it. If you don't like chopped ginger, you can always grate the ginger or use ginger paste. Now add washed spinach and sauté for a good few minutes, which is until the green color starts to change slightly.
  • Then add the tomato puree to the spinach and saute for another few minutes until tomato puree doesn't smell raw. Also add salt, red chili powder to it.
  • Now add water and cover it to boil for a few minutes. You will start noticing the spinach cool has changed more. Uncover for a couple of minutes.
  • Add cumin powder, also taste to see if you need additional salt and red chili powder. Simmer for a few minutes and your Spinach & Tomato Soup is ready.
