Banana Nut Muffins

Ingredients
  

  • 2 cups all purpose flour maida
  • 1.5 tsp baking soda i used only 1 tsp
  • ½ tsp salt
  • 4 riped bananas
  • 1 cup brown sugar
  • ¾ cup melted butter and cooled
  • 2 eggs
  • 1 tsp vanilla essence
  • ½ cup pecans used walnuts

Instructions
 

  • In a large bowl combine flour, baking soda and salt; set aside. Using a fork mash 2 bananas roughly so they have a little texture.
  • With an electric mixer using the whisk wire, whip the remaining two bananas along with the brown sugar for a good 3 minutes. Add the melted butter, vanilla essence, eggs and beat well, scraping down the sides using a spatula.
  • Now add the dry ingredients and mix until incorporated. Fold the mashed bananas and nuts into the batter. Using the spoon, put the batter halfway into the muffin pan.
  • Pre-heat the oven at 350 F. Tap the muffin pan so that the batter is distributed evenly without any air bubbles.
  • Bake it for about 18-20 minutes or until the toothpick comes out clean. Let it cool down for a few before taking them out of the pan.
  • Serve warm or hot with a cup of coffee for breakfast or eat it as a snack.
