Spanakopita...My Way!!

Spanakopita, a greek snack made with spinach and feta cheese.

Ingredients
  

  • 1 cup chopped spinach I used frozen
  • ¼ cup paneer crumbled I used homemade
  • 1-2 tsp cumin powder
  • salt to taste
  • ½ tsp red chili powder
  • 1 tbsp olive oil
  • 1 packet of puff pastry sheets used readymade
  • 1 egg
  • 1 tbsp water
  • 3 tbsp all purpose flour

Instructions
 

  • In a frying pan, heat the oil. Add chopped spinach and saute until almost cooked.
  • Add salt, red chili powder along with paneer and cumin powder. Mix well and sautee for additional few minutes until the spinach color changes. Let the mixture cool down. The filling is ready.
  • Thaw the puff pastry sheets. Pull out a pastry sheet, using a little flour roll the pastry sheet.
  • Cut out small squares and fill 1 tablespoon of the spinach filling and give it a shape of your choice. I gave it a shape of a potli, or you can fold it in half and using a fork seal the edges.
  • Since the pastry dough was so soft I just rolled it into a ball and using a rolling pin rolled it and fill it with the filling.
  • Preheat the oven at 400F and bake it for 10-13 minutes or crust is golden brown. Serve hot with your favorite chutney or eat it just like that.
