Pad Kee Mao (Drunken Noodles)

Mouthwatering stir fry which will be quick dish for a weeknight.

Ingredients
  

  • 1 packet flat noodles Toi San Imitation Noodle
  • 1 small green bell pepper
  • 6-8 garlic minced
  • 1 pound chicken breast cut in small pieces ( use soy protein for veg option)
  • 1 small onion sliced lengthwise
  • 2-3 tsp sweet soy sauce
  • 1 tsp sugar
  • 1-2 tsp fish sauce or to taste veg option is Golden Mountain Seasoning sauce
  • 1-2 tbsp oyster sauce veg option eliminate this completely
  • ½ cup basil leaves
  • 3-5 green chilies slit lengthwise
  • 2 tbsp vegetable oil

Instructions
 

  • First boil the water and add the rice noodle sticks and turn the gas off. Let it stand for 10 minutes or less until they are softened. Do not overcook...Rinse it in cold water so they don't stick together..
  • In a frying pan, add a couple of tablespoons of oil, add the chicken cubes and cook it until it is done or you can cook chicken along with garlic & green chillies in the next step.
  • In a separate wok or a kadhai heat up the oil. Add chopped garlic and chillies. Sauté for a couple of minutes and add the cooked chicken.
  • Add the cooked noodles along with sweet soy sauce. Stir for a couple of minutes.
  • Now add the onions and green bell peppers. Also add sugar, oyster sauce and stir again for another couple of minutes. (You can also mix the fish sauce, oyster sauce and sweet soy sauce and pour it on the noodles in one go)
  • Now add fish sauce and mix well. Throw in the roughly chopped basil leaves and turn the gas off. Mix everything together.
  • Serve hot immediately.
