Wash and cut the potatoes in quarters and set aside.
Parboil baby red potatoes in boiling water for 5 to 8 minutes to precook them.
In a large bowl combine olive oil, garlic, salt, herbs, pepper, and parmesan cheese together, mix it well to combine. Add a little more olive oil if the parmesan cheese has absorbed most of it.
Toss parboiled potatoes into the garlic parmesan mixture to evenly coat. Let it sit for a mins or you take cook it right away too
Pre heat your oven or air fryer at 400F. Line a baking tray with a aluminum foil and spray it. Place the potatoes in the tray and bake it for 30 mins or more or until crispy.
If using an air fryer preheat it and then place the potatoes and air fry them until crispy.
Serve it hot, sprinkled with more parmesan cheese. Also add chopped parsley and add it to the butter. Pour it over the cooked potatoes. Otherwise just garnish it with fresh or dried parsley.
