I just love Karela…Have you had karela aaloo with a crispy paratha?? Yummy!!!! That’s what comes to my head when I see this combination. ย The potatoes taste so good when mixed with karela. ย Bitter Gourd also has health benefits. ย It helps in lowering the blood sugar levels. ย Everyone is use to the bharwaan karela (stuffed bitter gourd), not many people make it like this. Enjoy the flavors…
Ingredients:
- 5-6 karelas cut and salted (for a couple of hours)
- 1 tomato diced
- 1 medium sized onion sliced
- 1-2 potatoes sliced length wise (depends on the size)
- salt to taste
- 1/2 tsp red chilli powder
- 1/2 garam masala
- 1/2 tsp turmeric
Directions:
To cut the karelas, first peel the skin using a peeler. ย Don’t discard the skin. Leave it in the bowl in which you are going to salt the karelas. Then cut them in round shape and sprinkle a little bit of salt all over them. ย Let it sit for a couple of hours. ย Wash the salted karelas so that there won’t be excess salt and set aside. ย Make all the water is drained. In a kadhai, add oil and shallow fry them.
Take them out of the kadhai and put it in a plate. In the same kadhai, add the onion and potatoes and sautee them for a few minutes.
Then add diced tomato and the peeled skin. Add salt, turmeric, red chilli, garam masala.ย Stir for a couple of minutes then add the fried karelas. Mix it well.
Cover it and let the potatoes cook all the way. ย Serve hot with parathas.
