Quinoa Potato Cutlets, an easy lunch idea for your kids lunch box which is filled with protein and carbs along with yummy flavors.

Ingredients
  

  • ½ cup quinoa cooked
  • 2 potatoes boiled or baked
  • 1-2 small green chilies chopped
  • 1 small onion finely chopped
  • 1 inch ginger finely chopped
  • cilantro finely chopped
  • 2 tbsp kasoori methi
  • Salt to taste
  • ½ tsp amchoor
  • ½ tsp garam masala
  • ½ tsp red chili powder
  • ¼ tsp chaat masala
  • olive oil

Instructions
 

  • Cook the quinoa according to the instruction on the packet. Set aside to cool down. While the quinoa is cooking, boil or bake the potatoes. I baked them in the microwave and let them cool down.
  • In a mixing bowl, add onions, ginger, green chili, cilantro. Mash the potatoes and add quinoa to it. Also add the all the spices at this time. Mix everything together using your hands. Make sure to test the spices and salt at this time. Add if you need anything.
  • In a frying pan, add olive oil and let it heat up a little. Take a little bit mixture at a time and make the balls out of it and press it down in between the palms. Shallow fry them on the hot frying pan and cook it turning in between.
  • Serve hot with mint chutney or ketchup.
