Thai Tofu Stir Fry

Ingredients
  

  • 1 pack firm tofu drained and pan fried
  • ½ cup of broccoli florets
  • ½ carrot julienned
  • chopped bok choy
  • 3-4 tbsp thai red curry paste
  • 9-10 garlic cloves minced
  • 1 tbsp vegetable or canola oil
  • 2 tbsp soy sauce or to taste
  • 2 tbsp oyster sauce
  • bunch of basil leaves

Instructions
 

  • Drain the tofu and shallow fry it in the pan or you can deep fry if you like and set aside.
  • In a wok, heat the oil and add garlic. Sauté for a couple of minutes and add red curry paste to it.
  • Add all the veggies which were cut and washed to the wok. Sautee for a few minutes, making sure they are not overcooked. Then add pan fried tofu to the veggies and mix well.
  • Now add soy sauce, oyster sauce and fish sauce. Stir for a few more minutes. Add chopped basil and turn the gas off. Your stir fry is ready to be served.
  • Serve hot with jasmine rice.
