- 2 cups fresh basil leaves
- 3-4 cloves garlic
- ½ cup pine nuts toasted
- 1 cup grated Parmesan cheese
- ½ cup extra virgin olive oil
- Salt and pepper to taste
- Lemon zest
Slightly toast the pine nuts, stirring it continuously so they don't burn and set aside.
In a food processor, combine basil, garlic, and pine nuts. Pulse until finely chopped.
Add Parmesan cheese, lemon zest and pulse again to combine.
With the food processor running, slowly pour in the olive oil until the mixture reaches a smooth consistency.
Season with salt and pepper to taste, and pulse once more to combine.
