Are there any chutney lovers here?ย I am a big chutney lover myself who loves anything chatpata (Tangy), khattaa meetha..(sweet & sour).ย So, how did I end up making Aam ki Launji one evening.
I was at my sister in law’s house and she goes Bhabhi (sis in law), I have these cut mangoes that I bought from Costco and they are a little sour.ย She goes can you please see if you can do something with it.ย I was like you can make mango chutney, so she is like I don’t know you can make it and give it to me.
I remembered that my Mom used to make this Aam ki Launji when I was little back in India.ย I had a little idea on what to do. ย After a couple of days I made the chutney and it came out super yummy. ย My sis in law enjoyed it to the core. ย As a matter of fact, I was told that she is done with the chutney and want more.
Ingredients:
- 3 mangoes, half kacha pakka, cubed ( you can use kachhe too)
- salt to taste
- 1/2 tsp kalonji (onion seeds)
- 1/2 tsp saunf (fennel seeds)
- 3/4 tsp roasted cumin powder
- 1/2 tsp red chili powder
- 2 tsp vinegar
- 1/4 tsp turmeric powder
- 1 tbsp oil
- 3-4 tbsp sugar or as per taste
- pinch of asafetida powder (hing)
Directions:
Heat the oil in a pan, and add hing powder, kalonji, saunf. ย Saute for a minute or so until slightly done. ย Then add the cubed mango pieces along with red chili powder, salt, cumin powder, and ย turmeric. ย Cover it and saute for 7-8 minutes. ย Do not over cook it.
Add sugar and vinegar to the mixture. ย Now simmer for a few minutes uncovered. ย The mixture should be mushy and a little bit gravy. It is not necessary that there will be gravy.
Your Aam ki Kaunji is ready. ย Store in the air tight container and keep refrigerated. ย Enjoy this sweet and sour chutney with your meal.
