Ingredients
2
cans of black beans
washed & drained
2
cans of sweet corn
washed & drained
Lime juice of 2 -3 limes
as per your tatse
1
small onion cut very small
1
mango cut into small cubes
2 -3
tsp
roasted cumin powder
Chopped jalopeno
chopped cilantro
salt to taste
½
red chilli powder
Instructions
If boiling black beans, boil them not too soft, I have used canned black beans and corn.
If using the canned black beans and corn, then make sure you drain the liquid and rinse it under cold water.
Chop onions, jalapenos, mangoes and put in a mixing bowl
At this time add drained corn and black beans along with salt, cumin powder, red chilli powder, and lime juice.
Mix everything together. Make sure you taste the salt and tanginess. If needed adjust accordingly and mix again.
Leave it in the fridge for atleast a couple of hours if possible for the flavors to marry. Serve it chilled as a salad or with tortillas as a salsa.
