Black Bean & Mango Salsa Recipe | Fresh, Easy & Healthy Salsa

Ingredients
  

  • 2 cans of black beans washed & drained
  • 2 cans of sweet corn washed & drained
  • Lime juice of 2 -3 limes as per your tatse
  • 1 small onion cut very small
  • 1 mango cut into small cubes
  • 2 -3 tsp roasted cumin powder
  • Chopped jalopeno
  • chopped cilantro
  • salt to taste
  • ½ red chilli powder

Instructions
 

  • If boiling black beans, boil them not too soft, I have used canned black beans and corn.
  • If using the canned black beans and corn, then make sure you drain the liquid and rinse it under cold water.
  • Chop onions, jalapenos, mangoes and put in a mixing bowl
  • At this time add drained corn and black beans along with salt, cumin powder, red chilli powder, and lime juice.
  • Mix everything together.  Make sure you taste the salt and tanginess.  If needed adjust accordingly and mix again.
  • Leave it in the fridge for atleast a couple of hours if possible for the flavors to marry. Serve it chilled as a salad or with tortillas as a salsa.
