Black Bean & Mango Salsa Recipe | Fresh, Easy & Healthy Salsa
Ingredients
- 2 cans of black beans washed & drained
- 2 cans of sweet corn washed & drained
- Lime juice of 2 -3 limes as per your tatse
- 1 small onion cut very small
- 1 mango cut into small cubes
- 2 -3 tsp roasted cumin powder
- Chopped jalopeno
- chopped cilantro
- salt to taste
- ½ red chilli powder
Instructions
- If boiling black beans, boil them not too soft, I have used canned black beans and corn.
- If using the canned black beans and corn, then make sure you drain the liquid and rinse it under cold water.
- Chop onions, jalapenos, mangoes and put in a mixing bowl
- At this time add drained corn and black beans along with salt, cumin powder, red chilli powder, and lime juice.
- Mix everything together. Make sure you taste the salt and tanginess. If needed adjust accordingly and mix again.
- Leave it in the fridge for atleast a couple of hours if possible for the flavors to marry. Serve it chilled as a salad or with tortillas as a salsa.
