Mexican Pinwheels

So are you all ready for the Super Bowl?  Looking for a make ahead and easy appetizer for your Super bowl party?  I made the Mexican Pinwheels for the Super Bowl collective for my friend Sonal. She blogs at www.simplyvegetarian777.com.  Mexican Pinwheels was the first thing that came to my mind when the collective was announced. I was like that’s it, no more scratching my head.

She was looking for a vegetarian appetizer with 5 ingredients or less. As per the need, I decided to make something which is easy and something you can make ahead.  All the ingredients are store bought which makes it a lot easier.  I love the recipes that we can make a day before so there is less work on the day of the get together.

This collective is going to be published end of this month by Sonal. She has some talented bloggers who are part of this collection. So, if you want you can have your friends over as we have you all covered with this awesome collection. Cant wait???? Me neither to see what all the blogger friends have come up with. 

 

Ingredients:

  • 1 packet flour tortillas (corn tortillas if looking to make it gluten free)
  • 1-2 packets cream cheese, softened
  • 2 cans of refried beans
  • 1 small red onions, chopped
  • chopped cilantro
  • 1 packet taco seasoning
  • Salsa ( store bought or home made)

Directions:

First of all get the cream cheese out and let it sit out so that it can be easily spreadable. Also get the refried beans in a bowl and add taco seasoning,  Mix it well so that the beans are well seasoned.

Chop the onions & cilantro and set aside.  Lay out the tortilla flat on the cutting board.  Spread a layer of cream cheese, and then refried beans.  Sprinkle a few chopped onions and cilantro on top of it.

Roll the tortilla starting from one end all the way down.  Wrap it in the cling wrap, tight enough so that it doesn’t open.  Refrigerate for a couple of hours.

img_5128Cut it using a serrated knife.  Serve it cold with store bought or home made salsa.
