Black bean and Mango Salsa is a very colorful and refreshing salad/salsa. ย It is filled with a lot of flavor. ย Specially in summer when you are not mood to cook, just eat it as a salad because it is filling and delicious.
Ingredients:
- 2 cans of black beans (washed & drained)
- 2 cans of sweet corn (washed & drained)
- Lime juice of 2 limes
- 1 small onion cut very small
- 1 mango cut into small cubes
- 2 -3 tsp roasted cumin powder
- chopped cilantro
- salt to taste
- 1/2 red chilli powder
Directions:
In a mixing bowl, add corn and black beans. ย Cut all the other ingredients and pour on top. ย Now add salt, cumin powder, red chilli powder, and lime juice.
Mix everything together. ย Make sure you taste your salt and sourness. ย If needed adjust accordingly and mix again.
Serve chilled as a salad or with tortillas as a salsa.
