Black bean and Mango Salsa is a very colorful and refreshing salad/salsa. It is filled with a lot of flavor. Specially in summer when you are not mood to cook, just eat it as a salad because it is filling and delicious.
- 2 cans of black beans (washed & drained)
- 2 cans of sweet corn (washed & drained)
- Lime juice of 2 limes
- 1 small onion cut very small
- 1 mango cut into small cubes
- 2 -3 tsp roasted cumin powder
- chopped cilantro
- salt to taste
- 1/2 red chilli powder
In a mixing bowl, add corn and black beans. Cut all the other ingredients and pour on top. Now add salt, cumin powder, red chilli powder, and lime juice.
Mix everything together. Make sure you taste your salt and sourness. If needed adjust accordingly and mix again.
Serve chilled as a salad or with tortillas as a salsa.
