Quinoa a high protein and fiber, a versatile grain with a mild nutty flavor, which can be used in desserts, breakfast, salads. ย I have been wanting to make something with quinoa for a while, after seeing such lovely posts from foodies on the different food groups. ย This is the first time ever I have made quinoa in my house, wasn’t sure how everyone is gonna like it. ย My husband goes I am not sure if I want to try it as it reminds him of couscous and he doesn’t like couscous at all. So, I was like you are missing out…Then my 7 year daughter comes from school and I go, do you want to try what I made new, she goes yeah mama.. She loved it. ย That made my day for sure…
ย Ingredients:
- 1 1/4 cup quinoa (used organic rainbow quinoa)
- 1/2 red bell pepper
- 1/2 ย cup black beans, rinsed (used can ones)
- 1/2 tsp cumin powder or to taste
- 1/4 tsp red chili powder
- salt to taste
- 1/2-1 juice of lime
- 2-3 cloves of garlic
- chopped cilantro
- 1/2 jalapeรฑo chopped
Directions:
Cook quinoa according to the instructions on the packet and set aside. ย Now is a pan, add a teaspoon of oil add chopped garlic. Sautee for a couple and then add the black beans, red bell pepper, jalapeรฑo. ย Stir everything together for a couple of minutes.
Now add salt, cumin powder, red chili ย powder and give it a good mix. ย Squeeze lime juice and sprinkle cilantro. ย Mix well and your healthy dish is ready which is so flavorful…
