The minute Sonal (from simplyvegetarian777) and Shruti (from cookingwithsj) have made the announcement for the soup event they are holding, I had this Black Bean soup stuck in my head. May be because my family loves this soup especially my daughter. It is such an easy soup which is hearty and full of protein. Jalapeño, cumin & oregano infuse this simple soup as it is cooked. I would like to share this recipe which is adapted from Food Network and is a keeper for sure.
Ingredients:
- 3 cans of black beans
- 1 tsp roasted cumin powder
- 1 tsp red chili powder
- 1/2 tsp oregano
- 2 tbsp tomato puree
- 1 onion chopped
- 3-4 garlic cloves grated
- 1/2 jalapeño, seeded n chopped
- water
- Chopped cilantro for garnish
- dollop of sour cream ( don’t add this if you are watching the calories)
- 1 tbsp Salsa ( I didn’t have it so I added chopped red bell pepper)
Directions:
In a pot, add 2 tbsps of olive oil. Then add chopped onions and let it cook for about 5 minutes.
Now add grated garlic, jalapeño and stir for a couple of minutes.
Then add cumin powder, red chilli powder and oregano. Stir for additional few minutes until you smell the aroma of the spices.
Purée one can of black beans n add to the pot. Then drain the other 2 cans and add to the pot. Stir constantly.
Add tomato purée along with a little bit of water and simmer for 15 mins to let the flavors marry. If you think the soup is thick then you can add a little more water and get the desired consistency.
Serve hot with a dollop of sour cream, salsa. Garnish with cilantro.
