Phirni, also spelled as Firni, has its origins deeply rooted in Indian culinary traditions.  It can be traced back to the Mughal era, around the 16th century, while others think it may have even earlier beginnings in ancient Persia. Regardless of its precise origin, Phirni has become an integral part of Indian cuisine, and its sweet legacy continues to thrive.

Simple yet indulgent ingredients come together to create the delectable dessert known as Phirni. How to prepare Instant Pot Phirni

The preparation is relatively straightforward but requires patience and a bit of finesse to achieve the perfect consistency and flavor when making traditionally.

Let me tell you a little secret lol…

I started making Samo Seed kheer, which is quicker than making the regular rice kheer. I was short on time as I had invited guests over and was panicking that I wouldn’t be done on time. I decided to make it in my handy dandy instant pot. I placed all the ingredients in the pot and pressed the “Porridge” button, which was auto set for 20 minutes. I let it release naturally too. Once I opened the pot, I realized that it had cooked a little more than the kheer texture. It tasted like Phirni to me, and that’s how I created the instant pot version of Phirni, which was a lot easier to prepare than the traditional way.

Ways to present and serve Instant Pot Phirni

Traditionally, small earthenware pots or clay bowls lend a rustic charm to the dessert. However, you can also opt for glass or ceramic bowls for a more contemporary presentation.

While the classic recipe undeniably delights, Phirni has undergone numerous variations and innovations over the years. Some people enjoy experimenting with flavors, introducing ingredients like rosewater, mango pulp, or even chocolate to create unique adaptations of this traditional dessert. The choice of rice can also vary, as some recipes incorporate basmati rice for a fragrant twist.

I presented my version in small glass jars, with a layer of strawberry compote at the bottom, followed by chilled Phirni and garnished with rose petals to give it a festive appearance.

Instant Pot Phirni

Instant Pot Phirni | Firni made with Samo Seeds

Ingredients
  

  • ½ cup samo seeds
  • 1 liter of milk
  • 1 cup of sugar
  • A pinch of saffron strands
  • crushed cardamom pods
  • Chopped nuts for garnish used almonds
  • rose water
  • dried edible rose petals

Instructions
 

  • Wash the samo seeds well and let it soak for a few mins.
  • Pour a little water before adding milk in the pot and press Saute button and let it heat for a few mins
  • Add the rice in it along with sugar and cardamom pods.
  • Change the Saute mode to Porridge mode and close the instant pot.
  • Let it cook for 20 mins which is what is auto set when Porridge is used.
  • Let it naturally release. Add chopped almonds and mix it.
  • Once it's at room temperature, refrigerate the Phirni for a few hours until it's nicely chilled.
  • Put it individually in the jar or the what ever serving dish you are using. Garnish with rose petalsbefore serving.
