Fenugreek is a plant which has oblong leaves which can be used in your daily diet and has a lot of health benefits such as treating elevated blood sugar levels. ย This dish that I have for you is methi aaloo which is fenugreek greens with potatoes. ย I have used very minimum spices as it has a very unique flavor of its own.
ย Ingredients:
- 3-4 bunches of methi (Fenugreek)
- 2-3 potatoes cubed
- 1/2 tsp cumin seeds
- ginger chopped
- 1/2 tsp turmeric
- salt to taste
- 1/2 tsp red chilli powder
- 1 tomato cubed
- 2-3 tbsps olive oil
Directions:
Clean and wash the methi leaves thoroughly.
Roughly chop those leaves and set aside. ย In a kadhai, heat the oil, and add jeera to it. ย Let it splatter. Now add the cubed potatoes and cover it for a few minutes.
Do not let the potatoes cook all the way, otherwise they will be overcooked.
Add the washed and chopped methi to the potatoes. ย Also add turmeric, red chilli powder, salt along with chopped ginger. ย Mix it well and cover again.
After a few minutes, uncover the kadhai and add the cubed tomatoes and let it cook uncovered.
Roast for a good few minutes until the water is evaporated.
Serve hot with chapati or roti as a side dish.
