Sooji ka Chilaa (Savoury Semolina Pancake)

Thinking what to cook is the hardest thing. ย Once you know what to cook, it is a piece of cake. ย Today I was thinking what to cook for lunch, didn’t want anything heavy as that will put me to sleep. ย So, wanted to keep it light. ย Sooji (Semolina) is very light and ended up making easy sooji ka chilaa. ย This can be eaten as a snack or if you want to eat it for breakfast.DSC_0491-1

Check the batter and adjust the consistency by adding a little water. Add salt and red chilli powder into the batter and mix.

In a frying pan, add a tbsp of olive oil, then pour the batter enough to spread it in a circular motion like a dosa. Sprinkle the chopped onion, cilantro, tomato, green chilli and paprika to it.

Iย did not add tomatoes as we don’t like chunky tomatoes, instead I added orange colored bell pepper for color.ย After a 2-3 minutes turn the pancake over and cook for another few mins.

Make sure it is cooked evenly and serve hot with mint chutney.
