So many different types of spices are used in Indian cooking. ย We Indians love the flavor of pickles. ย This spice blend is a mixture which is what we use when we make pickles. ย Pickled flavor dishes are full of flavor and beautiful aroma.
Ingredients:
- 2 tbsp Mustard Seeds
- 2 tbsp Cumin Seeds
- 2 tbsp Fennel Seeds
- 2 tbsp Nigella Seeds (Kalonji)
- 2 tsp Fenugreek Seeds
- 1 tsp Carom Seeds (Ajwain)
- 2 tsp Amchoor (Dry Mango Powder)
- 1/4 cup Whole Dried Red Chillies (approximately 75 grams)
Directions:
Roast all the ingredients except red chillies and amchoor in a pan stirring continuously so that it doesn’t burn. ย Now put the mixture in a bowl to cool down. ย In a meanwhile, roast the chillies also to have that smokey flavor.
Using a coffee grinder, grind all the ingredients and store it in an air tight container. ย This masala can be used in so many things such achaari chicken, gobhi, paneer etc.
