Bhindi Aloo

Bhindi Aloo is a very simple and easy dry dish which can be served with any kind of dal, curry or even raita.  Bhindi is one of mine and my daughter’s favorite.  This dish can be prepared in no time and is good for those busy weeknights.

Ingredients

  • 1 lb bhindi, cleaned and cut
  • 2 potatoes, cut lengthwise
  • 1 big onion, cut into cubes
  • salt to taste
  • 3/4 tsp turmeric
  • 3/4 tsp red chili powder
  • 3/4 tsp garam masala
  • 3/4 tsp amchoor
  • 2-3 tbsp olive oil

 Directions

Wash and let the bhindi dry completely.  Cut them in rounds and set aside.  In a kadhai, add olive oil and let it heat up.  Now add the onions and sautee for a few minutes.

At this time, add the lengthwise cut potatoes and cook for 3-4 minutes.

Now add the cut bhindi along with salt, turmeric, red chili powder, garam masala. Mix well.

photo-32-1Cover the bhindi and cook for a few minutes, until the potatoes are tender.  Uncover and add amchoor and let it cook for another few minutes.  Double check the spices and salt too, add if needed at this time.

Serve it with hot chapati, paratha along with your favorite raita.  It tastes so yum…
