Kimchi Fried Rice

Kimchi is a staple of Korean food which is very strong in flavor.  It is fermented cabbage which is spicy and pungent.  Love the flavors of this tangy, spicy cabbage.  Came across this recipe on the net and my love for kimchi made me try this recipe and wasn’t disappointed at all.  My whole family enjoyed this easy recipe which is full of flavors and the good thing is that it was ready in less than 30 minutes.

Ingredients:

  • 2 tbsp oil
  • 1 large egg ( I didn’t use it)
  • 1 clove garlic, chopped
  • 1/4 cup onion, finely chopped
  • 1/2 Kimchi chopped small, + 1 tbsp Kimchi juice
  • 2 cups cooked white rice ( a day old)
  • 1 tbsp soy sauce or to taste
  • 1/4 tsp sesame oil
  • 1/8 tsp black pepper
  • 1 stalk scallions cut into small rounds

Directions:

Heat up a wok or frying pan with a little oil.  Cook the egg sunny side up and set aside.  Now heat up the wok, if not used a wok, add oil and then add the chopped onion and garlic, sautee for a few minutes until you smell the aroma.

Then add the small cut kimchi and give it a stir for a couple of minutes.  Now add the rice and mix well.  Also add soy sauce, sesame oil, black pepper and scallions.  Stir a few times to mix the rice well.  Serve hot with the egg on top.  I didn’t put the egg as I don’t like the sunny side up.
