Guest Post: Spanish Tomato Rice by Prachi Garg

Another guest post from one of my fellow blogger friend Prachi who blogs at Divine Spice Box.  Met her through food groups and then we worked on a few things together.  She is a very talented blogger, photographer, and a writer.   One day I was chatting with her and just asked her if she would want to share my space as a guest, she didn’t even think twice.  Prachi creates fusion recipes and has an awesome collection of recipes.  She brought this vibrant looking Spanish Tomato Rice from her kitchen.  Do check out her blog for her lovely creations.

Thank you Sarika for having me over and letting me share some space on your blog. I got introduced to Sarika through a common blogger friend last year and our association has turned into a sweet friendship. During the last year, we got various opportunities to work together, being co-admins on Ghar ki Thali (a food group on FB) and a project called Diabetes Friendly Thursday (DFT). I got to see Sarika’s amazing creations while working for DFT. Her recipes are always easy, kid friendly and fun – the best combination ever J Her forte is Indian cooking and I am simply in love with her creations. My favorite recipes from Sarika’s blog are Masala Mixes – Rasam Powder, Sambhar powder and her Garam Masala – YUM ! I feel when it comes to Indian cooking, the right masalas make all the difference and It is amazing to be able to make them at home.  Sarika, I am so inspired to make my masalas too after reading your posts.

When Sarika asked me for a guest post, I was thrilled and thought it would be fun to bring a dish from my spice box to her spice zone.  While many ideas flocked in my head, I thought why not create a dish which would be reflective of my style of cooking (fusion Indian) but can still mingle with Sarika’s dishes. So, I decided to go the Mexican route and prepare a popular rice dish – Sopa de Arroz / Spanish Tomato Rice.

I recently got a chance to try out spanish tomato rice at a Mexican friend’s place. It so happened that me and my husband were invited for a potluck at my friend’s place and many of dishes people got were of Mexican origin. I got to try some really good vegetarian chili but apart from that the only other dish was vegetarian was “sopa de arroz” or Spanish tomato rice. It is usually served as a side dish but well we ate it like main course:P It was delicious !

I went back home and decided I needed to make this dish at home myself. After reading a couple of recipes and understanding the basics of this dish, here I am with my rendition. Hope you all like it !!

 

Ingredients:

  • 2 cups long grain rice (i used jasmine rice)
  • 3 large tomatoes, skin removed and pureed (approx 1.5 cups )
  • 2.5 cups water/ vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons oil
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste
  • 3-4 cloves of garlic, minced
  • 1 small jalapeno/ green chili, minced
  • 1 small onion, finely chopped
  • Juice of 1 lime
  • handful of fresh coriander, finely chopped

Directions:

  • Wash the rice thoroughly and drain the water.
  • Take a thick bottomed pan and add the butter + oil to it. Add in the washed rice and roast on medium flame for a couple of minutes or till the rice starts to get slightly brown.
  • Once the rice is roasted, remove and keep aside.
  • In the same pan, add the chopped onions and garlic. Saute till the onions are translucent.
  • Next, add in the pureed tomatoes, jalapeno and tomato paste. Mix well and cook till the tomatoes are cooked down and the water evaporates (a few minutes)
  • Now, add in the toasted rice, water, salt and pepper. Cook on high till the water boil. Once the water boils, reduce the flame and cover the pan with a lid. Let it cook till the rice is cooked. Add more water if required.
  • Using a fork, fluff the rice and check if done. Add in lemon juice and gently mix. Garnish with fresh coriander and serve warm.
