Phaliya Aloo (Green Beans & Potatoes)

So, how is everyone doing?  Hope you all are enjoying your summer.  Its almost to the end and we will all have to get back to our daily routine.  Once you go back in to your routine, you need those easy recipes where you don’t spend too much time especially on week days.  Today I am bringing a simple dish called Phaliya Aloo which is flavorful and easy is to prepare.

Fresh green beans are low in calories and has no saturated fat along with high dietary fiber and vitamin A. Here is US, greens beans are consumed boiled, sautéed or in a form of casserole. There are so many different ways to make it.  You may also want to try Masala Beans with Fenugreek.  I love them with just plain white rice or paratha.  Do try it and you will fall in love with it.  Thats my promise to you…. heart

 

Ingredients:

  • 1.5 pounds green beans, washed and cut
  • 3 medium potatoes, cubed
  • 1/2 tsp cumin seeds
  • salt to taste
  • 3/4 tsp turmeric
  • 3/4 tsp red chili powder
  • 3/4 tsp garam masala
  • 1-2 tbsp olive oil
  • 3/4 tsp amchoor powder

Directions:

Cut the green beans into small pieces and wash n set aside.  Now cut the potatoes into medium sized cubes and leave it in the water until ready to use.

In a kadhai, heat the oil.  Add cumin seeds and let it splatter.  Now add the potato cubes and cover it for a few minutes and let it cook half way.  Add the washed green beans along with the all the spices except amchoor.  Mix it well and once again cover it and cook on a slow to medium heat.

Uncover it after 5-7 minutes and see if the potatoes are cooked. If they are then cook it uncovered for few additional minutes until the color of the beans change from bright green to a dull green.  Add amchoor at this time and mix it well.  If the potatoes are not cooked then cover for a few more minutes.

After sautéing uncovered for few minutes, green beans are ready.

DSC_4625Serve it hot with a chapati accompanied with your choice of lentils.  You can also eat it with plain white rice.
