Quick Tawa Baigan (Eggplant)

Few weeks back, Ruchi from Foodfellas4you asked me if I would like to do a guest post for her blog.  I said yes without any hesitation, but this guest post was a little different than what I was used to.  Ruchi asked me to pick any of her recipes and recreate it along with a little write up about the recipe.

When I was going through her blog to see what can I make for her, this baigan recipe caught my attention.  I read the recipe and I was like, this is so easy, but believe me this easy recipe was just awesome.

There are so many different ways to make eggplant, grilled, baked, fried etc.  So try this new way of making eggplant when you are want something quick and easy for your week nights as a side dish.

Ingredients:

  • 1 eggplant, washed & sliced (globe kind)
  • salt to taste
  • olive oil for pan frying
  • 1 tsp red chili powder
  • 1 tsp chaat masala
  • 1/2 cup rice flour

Directions:

Wash and cut the eggplant into round slices.  Pat dry it.   Sprinkle salt, red chili powder and chaat masala on both sides.

DSC_3092-1Heat the oil in shallow frying pan or a tawa.  Now press each individual slices lightly onto the rice flour.  Shake the excess off and place them on the tawa.  Cook the eggplant slices on both sides until done.

DSC_3088-1Your tawa/pan seared began is ready.  Serve hot as a side dish with rice and dal.
