White Urad dal is skinless bean which is very popular in Punjabi cuisine. This dal is used for various other items such as idli, dosa, dahi vada etc. This is a very simple yet tasty dal which can be enjoyed dry or with gravy…
- 1 cup urad dal (white one)
- 7-8 garlic cloves chopped
- 1 tbsp ginger chopped
- 1-2 green chilli chopped
- 2 dry red whole chillis
- 1 tsp cumin seeds
- 3/4 tsp turmeric
- salt to taste
- 1/2 tsp red chilli powder
- 3/4 tsp garam masala
- 1/4 cup tomato puree
- 3-4 curry leaves
- olive oil
Wash the dal throughly until water doesn’t look cloudy.
In a pressure cooker, add olive oil on a medium heat. Add cumin seeds, dry red chillies, asafetida, curry leaves. Let the cumin seeds splutter. Now add garlic and sautee until light brown, then add ginger, green chillies and sautee you for a couple of more minutes.
After sautéing for a few minutes, add the tomato puree along with salt, red chilli powder, turmeric, and garam masala. Roast the masala until you it leaves the oil.
Add the washed and drained dal to the mixture. Mix well and stir for a few minutes.
Add about 2-3 cups water and put the lid on the pressure cooker. Let it cook until 3-4 whistles and do not open until the steam goes down. After opening the pressure cooker, if you think the consistency is too thick then you can add a little boiled water and let the dal boil without a lid. When you get the desired consistency turn the gas off. Pour the dal in a serving bowl. Serve hot and garnish with cilantro and some lime juice before serving.
