Wadi Pulao

So, how is everyone’s summer coming along?  Mine are super busy, as you all can tell I have been away from blogging for over a month now.  After all those snowy and cold winters, we all wait for summer when we can finish a few home projects, be out and about, pool time and lots more. Bringing a simple punjabi style one pot meal called Wadi Pulao.

A couple of weeks back, my parents, brother and sis in law visited me here in NJ.  Enjoyed my time spending with them as plans didn’t work the way we wanted it to work.  Made the best out of it.  We were thinking of what to make for lunch one afternoon and I was like mummy lets make Wadi Pulao as I have been wanting to make for the longest time.  To my surprise, husband was like what is cooking, smells really good.  He tried it and enjoyed it.

Ingredients:

  • 3-4 Punjabi Wadi
  • 1 cup basmati rice
  • 1 potato, sliced lengthwise
  • 1 onion, cut lengthwise
  • 1 tomato, cubed
  • 1 tsp cumin seeds
  • salt to taste
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1 tbsp olive oil
  • water approx 2 cups

Directions:

Wash the rice and let it soak for a few minutes.  Slice the onions, potatoes and tomato and set aside.  In a pressure cooker, add oil and cumin seeds.  Let the cumin seeds splatter and then add wadi to it.  Let it saute for a couple of minutes.

DSC_4489 Now add onions and saute for a few minutes.  Also add the potatoes, tomatoes and all the spices at this time.  Saute for another couple of minutes and then add the washed rice and mix everything well.  Let it saute and then add water to it.

DSC_4490Cook it in the pressure cooker until one whistle.  Open the pressure cooker as you don’t want your rice to get mushy.  If you think its needs another few minutes

Serve hot with plain yogurt, raita or your favorite pickle.
