Types of Besan
Youโll find two types of besan โ a fine variety used daily for dishes like pakoras and kadhi, and a coarse one known as Ladoo Besan in Indian stores. You can use either to make this recipe. The key to perfecting any besan-based dish is to slow roast the flour, which develops its nutty flavor and removes the raw aroma.
Tips for Perfect Besan Ladoo
- Always roast on low flame for even cooking and best flavor.
- Use good quality ghee for authentic taste and aroma. I used homemade ghee.
- Allow the mixture to cool slightly before adding sugar โ so the sugar doesn’t melt
- Adding a couple of tablespoon of water once roasted gives it a grainy texture (learnt this tip from Cook with Parul)

Besan Ke Ladoo | Quick and Easy Festive Sweet Recipe
Ingredients
- 3 cups besan
- 3/4-1 cup ghee
- 1.75 cup powdered sugar i did slightly less
- ยพ tsp cardamom powder
- pinch of yellow color optional
- nuts optional
- 3 tbsp water
Instructions
- In a heavy-bottomed pan, heat ghee on low flame. Add the gram flour and start roasting. Keep stirring continuously to ensure it doesnโt burn. This step takes time โ around 15 to 20 minutes โ but the patience pays off with an irresistible aroma and deep golden color.
- Once the besan is roasted and releases a nutty fragrance, add food color mixed with water and mix. Remove it from heat and let it cool slightly. Then add cardamom powder and mix well.
- When the mixture is warm (not hot), add powdered sugar and mix until well combined. You can also add chopped nuts for extra texture.
- Take small portions of the mixture and roll them into round ladoos. If the mixture feels dry, add a spoon of warm ghee to bring it together.
- Let the ladoos cool completely before storing them in an airtight container. They stay fresh for up to two weeks at room temperature!
